Baked Tomatoes with Mozzarella and Basil for #WeekdaySupper

Another month, another #WeekdaySupper! Inspired by Family Foodie, we’re offering recipes every day of the week to keep your family happy. In August, one of my favourite things to eat is a caprese salad – the simple combination of perfectly ripe tomatoes, fresh mozzarella and vibrant basil leaves is just gorgeous. But, after the wonderful weather in July, we’ve got a period of cooler, rainy days, which call for something warm at dinner time. Which led me to create this dish: Baked Tomatoes with Mozzarella and Basil.

Vegetarian Hortobagyi Pancakes for #SundaySupper

I am a born adventurer, so it is a happy #SundaySupper indeed that adventure is the theme! Hosted by The Foodie Army Wife, we are going intrepidly into the kitchen to cook up dishes we’ve never tried before. But for me, adventure in its most literal sense – travel - and food go hand in hand.  I travel often and voraciously, and trying new dishes in new places is one of my favourite things to do. I pick up recipe books as souvenirs of the places I visit, which is where this strange-sounding recipe, Vegetarian Hortobagyi Pancakes, comes from. It is a slightly inauthentic take on a Hungarian dish, but I hope I will be forgiven for the modifications.

Moroccan Lentil Loaf for #WeekdaySupper

The #SundaySupper group is so full of creativity and ideas that it’s just too much for one day a week, so Family Foodie has launched #WeekdaySupper. But, rather than everyone in the group cooking something all the time, we are taking a more relaxed approach, with just one recipe from one member, each day of the week.
