Risotto is one of my favourite dishes to make year-round; it is so versatile and just works so well with whatever happens to be in season. And now that Spring has finally arrived (hello, long, balmy evenings!) I can think of no better way to welcome the delayed season in than by cooking up a Risotto Primavera, especially for my night of Family Foodie’s #WeekdaySupper.
