Rice, Bean and Vegetable Casserole for #SundaySupper

I love slow-cooking. There is something so comforting and wonderful about a pot simmering happily on the stove, or the aroma of something baking slowly in the oven. It is food which requires a bit of foward planning and a little bit of love, but it creates the most delicious meals imaginable. So it makes me very happy indeed to be participating in this week’s Cooking Low and Slow #SundaySupper, hosted by Susan of The Girl in the Little Red Kitchen.

Raspberry and Hazelnut Friands for #SundaySupper

This #SundaySupper, hosted by Heather of Hezzi-D’s Books and Cooks is all about Mothers, since it is Mother’s Day in the US. These Raspberry and Hazelnut Friands are easy to make and look very pretty, making them a lovely homemade gift.

Dark and Spicy Chocolate Pots de Creme for #SundaySupper

Chocolate. Spice. Cream. This is one indulgent Cinco de Mayo dessert. Known here in Britain as baked custard, but sounding much prettier with their French name, pots de creme, these are little pots of heaven. But rather than having a sweet, European flavour, these Dark and Spicy Chocolate Pots de Creme are distinctly Mexican, especially for this Cinco de Mayo #SundaySupper, hosted by Jen of Juanitas Cocina (I can’t think of anyone more appropriate to host this week!)

Risotto Primavera for #WeekdaySupper

Risotto is one of my favourite dishes to make year-round; it is so versatile and just works so well with whatever happens to be in season. And now that Spring has finally arrived (hello, long, balmy evenings!) I can think of no better way to welcome the delayed season in than by cooking up a Risotto Primavera, especially for my night of Family Foodie’s #WeekdaySupper.

Vegetarian Hortobagyi Pancakes for #SundaySupper

I am a born adventurer, so it is a happy #SundaySupper indeed that adventure is the theme! Hosted by The Foodie Army Wife, we are going intrepidly into the kitchen to cook up dishes we’ve never tried before. But for me, adventure in its most literal sense – travel - and food go hand in hand.  I travel often and voraciously, and trying new dishes in new places is one of my favourite things to do. I pick up recipe books as souvenirs of the places I visit, which is where this strange-sounding recipe, Vegetarian Hortobagyi Pancakes, comes from. It is a slightly inauthentic take on a Hungarian dish, but I hope I will be forgiven for the modifications.
